So for all of you who have eaten too much curry and now hate Indian food, quite like myself, but really LOVE naan (because who doesn’t?) — check out this recipe for naan pizza that Lindsay came up with a while ago. It’s perfect and easy for you pizza lovers who are always searching for a healthier option, trust me, they do exist and you won’t regret trying this instead of reaching for the phone to order from your local pizza shop–it also costs WAY less. You also don’t need to be a vegetarian for this recipe, add some chicken if you eat meat.
What you’ll need:
1 sweet potato
Slices of gouda cheese
Basil pesto (we got ours store bought)
Extra virgin olive oil
Whole wheat naan
Recipe (serves 2):
Preheat oven to 350.
Put aluminum foil down on baking sheet, spray with cooking spray.
Place naan on baking sheet.
Put a thin layer of olive oil on the naan.
Spread basil pesto (we got it store bought because Milson makes cooking IMPOSSIBLE– but we love him anyway) onto naan.
Put gouda onto naan over pesto.
Cut avocado, onion, pepper, and sweet potato into chunks.
Cook onion, pepper, and sweet potato in a pan on stovetop until sweet potato has softened.
Place on naan with avocado.
Place in oven for 15-20 minutes until outer edges of naan are crisp.
