Cranberry Honey Pear Crostini

Recently, Lindsay and I made crostinis for a work function and being vegetarians, we were rather limited with options so we made them with tomato, basil, and mozzarella on baked tuscan bread coated with olive oil and balsamic vinegar. We instantly fell in love with this recipe, but as we all know, vegetarians LIVE off caprese–every menu always uses this as their vegetarian option, so it can get really old really quickly. In saying that, we decided to create our own crostini recipe that’s super simple to make and BEYOND satisfying!

What you’ll need:
Tuscan bread from any bakery
Pear
Dried sweetened cranberries
Fat free honey balsamic dressing
Fig cereal bar (we got ours from Trader Joe’s)
Bleu cheese

Recipe:
Preheat oven to 350. Lay out slices of tuscan bread across a baking sheet coated with aluminum foil and cooking spray–number of slices depends on how many serving–we used two, for the two of us and it was plenty as an appetizer.

Dice pear, lay onto bread. Place cranberries and sprinkle bleu cheese on bread as well. Chop cereal bar into small pieces and add to bread. Dress with honey balsamic dressing. Place in oven and cook until bread is golden.

See? Easy enough. Surprise your next dinner guests with this starter and they’ll think you had your event catered. đŸ˜‰ It’s THAT good.
