Spicy and Nutty Lentils

Protein can be often be hard to come by with our vegetarian diet so Lindsay and I try to figure out ways to incorporate different types of foods that contain protein. As we were walking around the grocery store the other day, we decided to buy lentils to up our protein intake but the real question after we bought the bag was “what the hell do you even really do with these things?” I remember having lentils in soup and in curry dishes but had never really cooked them myself or attempted to make anything with them. While the dish we came up with doesn’t look 100 percent appetizing, it tastes incredible and is packed full of nutrients.

What you’ll need:
A bag of uncooked lentils
Honey peanut butter
Soy sauce
Fish sauce
Frank’s hot sauce
Brown sugar
Olive oil
Salt/pepper for taste

Recipe:
First, wash lentils in a strainer to remove any debris and then add however many cups of lentils to a large sauce pan and for every cup, two cups of water, bring to a boil. We used 1 cup of lentils and two cups of water. Let this boil for around 20 minutes. While this is boiling, preheat oven to 425. Drain in strainer and rinse again. Coat an aluminum baking dish with foil and coat with olive oil. Dump cooked lentils into dish, add 1 tbsp soy sauce, 1 tbsp hot sauce, and salt and pepper for taste. Place in oven and allow to bake for 10 minutes. While the lentils are cooking, mix together 2 tbsp peanut butter, 1 tbsp hot sauce, 1 tsp fish sauce, 1 tsp soy sauce, 1 tbsp brown sugar — this will create the sauce you coat the lentils with once you take them out of the oven. After the 10 minutes passes, remove lentils, coat with sauce and place back into the oven for 10 more minutes.
