Vegan Coconut Mango Breakfast Parfait

We have been crushing coconut and mango lately and have been trying to figure out new recipes that blend the two because after all, you can only make so much coconut mango salsa. I’m not necessarily a breakfast person but I do know the importance of fueling up for the day so we made a spin on the traditional parfait incorporating chia, flax, almond, coconut, mango, banana, and dark chocolate.



What you’ll need:
5 tbsp flax & chia seed mix
1 diced mango
1 sliced banana
Handful of dark chocolate chips
1.5 cups coconut milk
2 cups almond milk
4 tbsp honey
Flake sweetened coconut

Mix together flax & chia seed mix, mango, coconut milk, almond milk, as much coconut as you’d like & honey. Refrigerate for 5-6 hours. Once gelled, place a layer of pudding mixture into a cup of sorts–we used our engagement mason jars ;)–layer banana, then pudding mix, top with dark chocolate chips, coconut, and banana.
