Peanut Butter, Coconut, Cranberry, Dark Chocolate Protein Bars

I know I’ve said before how hard it is sometimes as vegetarians for us to get enough protein and each time we go to the grocery store, we always end up spending a tremendous amount of our budget on pre-made bars and at 3+ dollars a box for 5 bars, it tends to become very expensive — so we decided to make them our own instead with ingredients that can be used in other recipes and for other bars as well. The first recipe we tried resulted in peanut butter, coconut, cranberry, dark chocolate protein bars, which are pretty awesome.

What you’ll need:
1/2 cup reduced fat peanut butter
1/4 cup dark chocolate chips
1/4 cup of craisins
1/4 cup coconut
3 tbsp Carrington Farms flax & chia seed mix
2 cups rolled oats
1 cup corn flakes (we used Barbara’s Bakery)
1 cup coconut milk
4 tbsp honey

Recipe (yields 24 bars):
Grind the two cups of oats to make flour. Add in flax & chia seed mix, coconut, craisins, chocolate chips, and corn flakes. In a small saucepan combine peanut butter, coconut milk and honey. Mix together until thick liquid. Add to dry mixture. Line a 11×13 pan with wax paper, pour mixture after fully combined into center of dish. Slightly wet your fingertips and begin to press the mixture down throughout pan until desired thickness occurs. Top with coconut. Freeze for 20 minutes, cut into bars, and refrigerate.
