Breaded Buttermilk Baked Onion Rings

Obviously Lindsay and I are human and crave things that we just never allow ourselves to have like fried foods. We attempt to continually find a healthier version and this time it just so happened to be with onion rings.

What you’ll need:
1 large sweet onion
1 canister of panko bread crumbs
Low fat buttermilk
Garlic salt

Recipe:
Slice onion into rings, separate. Place into a large container and coat with buttermilk. Let the onion soak for 2 hours. Preheat oven to 350. Place panko bread crumbs into a large plastic baggie, add in garlic salt  and pepper. Toss in onion rings, once coated place on an aluminum covered baking pan with cooking spray. Cook until golden brown, about 25 minutes.
