Wow, that was a mouthful, and yet still…not enough, after all, we know everything is sweeter with a touch of strawberries. Every time we go to make bars, it’s always an adventure. We try to think of what flavors would go best together while making sure you can pronounce everything on the ingredients list. Spring has officially sprung so that means strawberries are ripe and ready for the picking, which means they are also ready for our kitchen.
What you’ll need:
10 strawberries (amount may vary depending on size)
1/4 cup dark chocolate chips
4 cups organic thick cut oats (3 cups ground into flour)
1/2 cup coconut
1/4 cup light brown sugar — organic, free from bone-char
1/4 cup wheat flour
1 cup coconut milk
3 tbsp Carrington Farms chia and flax blend
Recipe (makes 25 bars):
Combine oats ground into flour, whole oats, dark chocolate chips, coconut, chia and flax blend in a medium sized bowl. In a medium sauce pan on medium heat, combine milk and brown sugar (this will be the binding agent). Once mixed well together and a dark brown color, remove from heat and add in wheat flour. Add to dry mixture and combine. Line a baking sheet with wax paper, pour mixture onto wax paper and with slightly wet fingers, press the mixture down to thickness of bar you prefer. Next, place strawberries in a blender and blend until a liquid consistency. Place on top of bars. Top with sea salt. Place in freezer for half an hour, slice.
