Always coming up with new inventions for bars and this time, we happened to have bananas lying around and thought it’d be great to incorporate these into the foundation of most of our bars.
What you’ll need:
3 cups thick cut organic oats (2 ground into flour)
1.5 cups coconut
1/4 cup dark chocolate chips
1 cup vegan corn flakes
3 tbsp Carrington chia and flax blend
1/2 cup peanut butter
Recipe (makes 25 bars):
Take all dry ingredients except chocolate chips and mix together (oats ground into flour, thick cut oats, coconut, corn flakes, chia and flax blend). Mush the six bananas and add in the peanut butter, combine. Pour into dry mixture until mixed throughout. Place wax paper onto a baking tray and with damp fingers, empty the mixture onto the paper and press down evenly. Top with coconut and chocolate chips. Place in freezer for 20 minutes. Cut into bars.
