Easy Kale Pesto

Oftentimes, we buy a bag of kale but since we aren’t eating a kale salad every night, find that it goes bad sometimes rather quickly. We decided to come up with different ways to use the kale so we get the most “bang for our buck” so to speak and from this was born our kale pesto.



What you’ll need:
1 cup sunflower seeds
4 cups deribbed kale
1 cup coconut
1/4 cup vegetable oil
6 tbsp balsamic vinegar
Juice of 2 oranges
1 medium chopped sweet onion
Garlic salt

Recipe (makes about 2.5 cups):
In a food processor, blend kale, coconut, sunflower seeds, and onion. Drizzle in oil, then balsamic vinegar, then juice of 2 oranges. Transfer to medium bowl, add in garlic salt and pepper until desired taste.
