Okay, so who doesn’t absolutely love sour rip candies? They are my favorite and absolute weakness and right when I went to go grab them in the candy aisle the other day, I had a moment where I thought to myself…”I wonder if we could make these healthier at home?” AND of course we can! They don’t exactly taste like my favorite candy but the sweet and sour is enough to combat cravings especially when they hit every other day because for everything that isn’t healthy, there is something that is. We had a couple of mangos lying around and a lemon, so we decided to use these in our first trial.
What you’ll need:
Flesh of 4 mangos
Juice of 1 lemon
Butter (for greasing pan)
Recipe (makes about 30 strips):
Preheat the oven to 230. Puree flesh of mango with juice of lemon. Grease a cookie sheet with a small amount of butter and add puree to cookie sheet. Spread thinly to desired thickness creating a rectangle in shape and place in oven. Cook at 230 for an hour and reduce heat to lowest temp possible (175) ad cook for another three hours. You’ll want to periodically check to make sure a. that the fruit isn’t sticking and b. that it isn’t burning. You will be able to tell when it’s finished because the fruit will lift up in one sheet if you peel from the corner. Once removed from the oven and cooled, cut into strips and next time you walk down that candy aisle, instead just go and grab some mangos.
